Healthy eating promotes and supports a healthy life. This book is focused on vitamin A deficiency prevention. Since the body is unable to produce vitamin A on its own, it must be obtained through our diets, which is frequently not done in certain conditions and in some areas around the world, resulting in negative long-term implications for the affected population, particularly infants. Vitamin A is necessary for vision, particularly dark adaption, immunity, bone growth and reproduction, corneal and sclera surface maintenance, and respiratory, urinary, and gastrointestinal epithelial integrity; vitamin A also affects gene expression. The book gave a broad overview of vitamin A including its metabolism and deficiency outcomes; it provided information on sources and strategies of vitamin A deficiency prevention and offered a practical way of using local foods such as plantain in producing ripe plantain beverage and using it as a provitamin A carotenoid and nutrition catalyst especially in a low resource setting communities where vitamin A deficiency is predominant.
